It all started as a dream, our bakery was born from the concern of Jesus, he wanted to recover the tradition of his ancestors, they taught him to love the world of bread. In his family there were always bakers, his dream was to recover the elaborations he had seen as a child, and to be able to offer his clients a bread with soul, thus elevating the experience of his guests, to the point that in 2017 he opened his own bakery, and He makes bread for sale to the public and for his own consumption in his restaurant.

Jesús Sánchez has wanted to recover the flavor and quality of the traditional breads of always. Amós bread is made with sourdough, without additives or preservatives and with long fermentations. This is the base with which we combine organic white wheat flour to make our bread, which ferments for 22 hours in a totally natural way.

More committed to the environment than ever, our flours come from national companies with more than fifteen years grinding organically produced wheat. Companies that are committed to consolidating collaborative relationships with farmers and specialized operators, which guarantee the supply of raw materials and, in turn, the regularity of each of these flours.

The result is a long-lasting bread, with an intense aroma and flavor of cereal, healthy and in line with the great traditional rustic breads. Healthier than ever, it facilitates the digestion and absorption of the minerals that we ingest in food. In addition, the long production process favors the breakdown of gluten into amino acids. The mother dough is a treasure in terms of nutrients: it contains vitamins, minerals, proteins and fatty acids. The bread is naturally preserved in its optimal state for longer because acetic acid is produced during the preparation and this inhibits the growth of mold.

The ingredients and elaborations guarantee their <<long conservation>>, with an intense aroma and flavor of cereal, healthy and aligned with the great traditional rustic breads, the restaurant highlights in a note.

Prepared solely using sourdough made from stone ground, ecological white wheat flours, the result is a bread with great personality. The preparation process takes place over 22 hours, encouraging the development of the gluten.

For this bread, in addition to using stone ground, ecological white flours, we also add 5 seeds: sesame, linseed, poppy, pumpkin and sunflower seeds. The preparation process of this bread is delicate, with the roasting of the seeds and the long rising time. All of this means that the result is a delicious bread that is smooth and crunchy at the same time.

This is a very smooth-tasting loaf of bread, prepared using sourdough, extra virgin olive oil (AOVE) and a little yeast . The result is a very moist bread, sweet-tasting, smooth and with great structure, along with a crunchy crust.

Of all the breads, this the most intense regarding aroma and flavour. This bread is prepared using white and wholemeal rye flours, along with sourdough prepared exclusively with the same cereal. The result is a dark, dense bread.
